Egg Bhuna Masala / Anda MasalaEgg bhuna masala recipe

This is one of my and my better half's favorite recipe. Egg bhuna masala is a special Dhaba style Indian dish which is full of flavors. Onion, tomatoes and combination of spices makes this dish delicious and aromatic. There are several ways of making Egg masala, this is one of my personal favorite which I am sure you'll will love it too. Do give it a try, and if you do please leave a comment below.


Preparation Time : 15 mins
Cooking Time : 30 mins
Serves : 3 - 4 pax

Ingredients

5 hard boiled eggs
2 tbsp Mustard oil/Any refined oil
1 tsp Cumin seeds
1 Bay leaf
1 piece of cinnamon stick
2-3 green cardamom
3-4 cloves
1/2 tsp Peppercorns
2 Dry red chilli
2 medium sized Onion paste
1 tbsp Ginger Garlic paste
2 medium sized Tomato puree
Salt as per taste
1/2 tsp turmeric powder
1 tsp coriander Powder
1/2 tsp cumin powder
1 tsp Red chilli powder
1/2 tsp Fennel seed powder
1/2 cup Milk
2 green chilli
1/2 tsp Garam masala powder
Kasuri Methi/Dry Fenugreek leaves
Garnish with Coriander leaves

Method

  • Hard boil 5 eggs and make a slit on the same
  • In a pan heat 2 tbsp oil and fry these eggs until the crust turns brown
  • In the same pan, crackle cumin seeds and then add whole garam masalas, saute them for 2 mins
  • Next add Onion paste and saute them until they turn dark brown in colour
  • Now at this stage add tomato puree and salt, close the lid and let them cook until oil starts oozing out
  • Once oil start to ooze out add dry masala's and green chilli (turmeric powder, coriander powder, cumin powder, chilli powder and fennel powder)
  • Add little water and saute all the masala's well
  • At this stage switch off the flame and then add milk, keep stirring continuously
  • Once milk is mixed well with the masala switch on the flame and cook for 2 minutes
  • Next add fried Eggs and coat them well with all the massala's
  • Finally add Garam masala and kasuri methi, cover and cook for 2 more minutes
  • Garnish with coriander leaves and serve hot with rice, roti/chapati, paratha or naan

Note:

  • I have used milk to make the consistency of the gravy more creamy. You can also add cream or cashew nut powder
  • Ensure to add milk after switching off the flame or else it may cuddle
  • Please adjust the spice level as per your taste

Bored with regular dal, here is a simple yet tasty Dal(Tur) Fry recipe. It is one of the basic and simplest of Indian cuisines. Tur dal / split pigeon peas pressure cooked with onion, tomatoes and spices to tingle your taste buds. Below is the detailed method of making Dal Fry recipe.

Dal Fry Receipe/Split Pigeon Peas

Dal Fry/Lentils
Cooking Time- 25 mins

Ingredients: 

1 cup tur dal/split pigeon peas
2 tbsp ghee/Vegetable oil
1 large chopped onion
1 medium chopped tomato
2 green chili
5 - 6 cloves of garlic
Small piece or half inch ginger
2 Kashmiri red chilli
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chilli powder
A pinch asafoetida (hing)
1/2 teaspoon garam masala (optional)
 Coriander leaves
Salt to taste

Method:

1.       Wash & Soak 1 cup tur dal / split pigeon peas in water for around 30 mins
2.       Cook in pressure cooker with 2 cups of water for 3 whistles.
3.       After 3 whistle let it rest for 15 mins until the pressure/steam releases completely
4.       Now open the lid and transfer the dal in a bowl
5.       In a pan take 2 tbsp of ghee/oil , on medium flame once ghee is hot add cumin seeds, dry red chilies, finely chopped ginger garlic,hing & onions. Sauté them for about 3-4 mins until onion turns translucent. Then add finely chopped tomatoes, turmeric powder, red chili powder, salt & green chilies. Mix well for about 2-3 mins.
6.       Finally add the pressure cooked dal , if required can add little water for the consistence
7.       Cook for about 5-6 mins and sprinkle few coriander leaves.
8.       Dal fry is ready to be served

Serving- Can serve 4-5 people.
Garnish with fresh coriander leaves and a dollop of butter to enhance the taste.

Sevai/sevaiyya or vermicelli kheer is one of my favourite and most famous Indian dessert.To give it a rich & thick texture I have used Khoya/Mawa/Kawa in this recipe.
This is a very simple & instant recipe anyone can try.

Sevai kheer/Vermicelli/Sevaiyya with Khoya

Sevai Sevaiyya kheer sevaiyyan
Stove to Serve Time: Approx 30mins.

Ingredients:

1 ltr Milk
1 cup vermicelli/ sevai
1 tbsp Ghee
4 tbsp sugar
3-4 cardamom/ ½ tsp cardamom powder
50 gms Khoya/Mawa
Dryfruits (Almond, cashew nuts, pista & Raisin)

Method:

1    1.    Cut dryfruits into thin slices
2.       Crush cardamom or can use ½ tsp cardamom powder
3.       Take ghee in a pan. Add sliced dryfruits to it. Roast them until the dry fruits turn brown and gives a nice aroma.Here i have used roasted vermicelli, if you don’t have roasted vermicelli u can roast them in the same pan with ghee until it turns pink.
4.       Keep yhe roased fryfruits & vermicelli aside
5.       Now in the same pan, add 1 ltr milk & bring it to boil
6.        Once the milk is boiled add khoya/mawa
7.       Stir them well to avoid formation of lumps.
8.       Once the milk has turned nice and thick add vermicelli/sevai to it. Cook it for about 10 mins
9.       Now add sugar, cinnamon powder & roasted dry fruits
10.   Check for sweetness & add sugar if required
11.   Cook all these mixture for 5 mins
12.   Switch off the flame & now this rich & tempting kheer is ready to be served.

Serving- Serve this dish with some roasted dryfruits. You can enjoy this hot or cold.
Serves 6 Pax.

Sabudana Khichadi is basically an Indian dish which is delicious breakfast & generally made during fast/vrat. Here is a perfect non-sticky sabudana khichadi recipe along with some roasted crushed peanuts and boiled potatoes.

Sabudana(Sago) Khichadi / Fasting Food

Stove to Serve Time: Approx 15mins


Ingredients:

2 cups Sabudana(sago)
2 tbsp roasted crushed peanuts
1 tbspn oil
1 tsp cumin seeds
2 green chillies
2 tsp sugar
Curry leaves
2 boiled potatoes
Lemon
Salt as per taste

Method:

         1. Soak good quality sabudana/sago in a vessel for atleast 3 hours. The water content to soak the sabudana should be little higher (around ½ inch) than the sabudana . For a non sticky sabudana , proper soaking of sabudana is highly recommended.
2.       Once the sabudana is properly soaked add roasted crushed peanuts to it, mix them well.Mixing of roasted peanuts prior to cooking will ensure that the sabudana doesn’t stick or become mushy.
3.       Boil potatoes till it is soft and then chop them into cubes
4.       Heat  some oil in a pan
5.       Add cumin seeds, roughly chopped green chillies,curry leaves & sugar (as per taste)
6.       Sauté them well
7.       Now add the already mixed sabudana & roased crushed peanuts to the pan.
8.       Add salt as per taste.
9.       Cook for atleast 10 mins.
10.   Once the sabudana is nice and soft squeeze some lemon juice to it. Lemon will give it a nice and tangy taste.
11.   Now the sabudana khichadi is ready to serve.
Serving- Serve this dish with a squeeze of lime juice and some roasted peanuts.
Serves 3 Pax.

Masoor Dal/Red lentils has the highest amount of protein among all the lentils.
Here I am going to show you how to make quick, easy and very tasty Masoor Dal/whole Red Lentils

Healthy Sabut (Akkha) Masoor Dal / Whole Red Lentils Recipe

Stove to Serve Time: Approx 25mins.

Ingredients:

1 cup sabut masoor dal/Whole red lentils soaked for around 3 hours
1 ½  tbsp oil
1 medium size chopped  Onion
2 medium size chopped Tomatoes
1 tsp coriander powder
2/3 green chillies
Curry leaves
Whole garam Masala (cardamom, black pepper, cinnamon & bay leaves)
½ inch ginger thinly sliced
3-4 crushed garlic
1 tsp cumin seeds
Coriander leaves
Salt as per taste

Method:

1.       Take some oil in a cooker. Heat in medium flame. Once oil is heated add whole garam masalas, cumin seeds, crushed garlic and chopped ginger, green chilles, few curry leaves and chopped onions. Sauté them well until onion turns golden brown.
2.       Now add chopped tomatoes and coriander powder. Cook for atleast 1 min .
3.       Add soaked masoor dal/Lentils and salt as per taste to the mixture. Stir well
4.       Close the lid of the cooker and cook for atleast 3-4 whistles.
5.       Open the lid once the cooker has released all the steam.
6.       Add water if required .
7.       Before serving, finally add chopped coriander leaves.

Serving- Serve this dish with a squeeze of lime juice and raw onions. Can relish it with rice, paratha, chapati or roti.
Serves 4 Pax.

French Beans are as healthy as one can get when it comes to vegetarian dishes.
Here is my crunchy and delicious recipe with a dash of crushed peanuts and stir fried potatoes.

Healthy French Beans Recipe

Stove to Serve Time: Approx 25 mins.

Ingredients

300 gms French beans
2 tbsp Cooking Oil
1 tsp Cumin seed
2 chopped green chillies
4-5 cloves finely chopped garlic
1 medium size Onion
2 medium size chopped potatoes
½ tsp turmeric powder
1 tbsp roasted peanut powder
1 medium size tomato
½ tbsp garam masala powder
Curry leaves
Coriander leaves
Pinch of asafoetida
Salt as per taste

Method:

1.       Heat 2 tbsp oil in a pan. Add cumin seeds, green chillies, curry leaves, pinch of asafoetida, and we have used chopped garlic instead ginger garlic paste so as to get the fresh taste of garlic.
2.       Add chopped onions sauté it till it turns translucent.
3.       Now add potatoes and turmeric powder to it and fry for atleast 2-3 mins.
4.        Add chopped French beans and salt as per taste.
5.       Add 1 tbsp roasted peanut powder as it enhances the taste of our dish
6.       Cook for atleast 5-7 mins, stirring occasionally. Do not overcook the vegetables to retain the crunchy taste.
7.       Now add one medium size chopped tomatoes and garam masala powder, cook for 2 mins.
8.       Garnish with fresh coriander leaves.

Serving- Enjoy this healthy and appetizing dish with roti, paratha, chapati or rice.
Serves 3-4 Pax.

Murg Palak Recipe aka Spinach Chicken


Murg Palak aka Spinach Chicken
Murg (Chicken) Palak (Spinach) is an authentic Indian recipe & a combination of taste and health in one dish.
It’s an excellent way to include spinach in diet. Murg Palak is delicious gravy of chicken added in spinach along with fresh spices. This will definitely tingle your taste buds, do give it a try.

Stove to Serve Time: Approx 1hr.



Ingredients

For Marinating:

1 kg Chicken
1  tbsp turmeric powder
½  Lemon juice
2-3 tbsp curd

For Grinding:

Green Masala : 1 cup Coriander leaves,4-5 green chillies,1 ½ inch ginger,1 bulb garlic. Grind to them all to a paste.
Palak/Spinach Puree: Boil two bunch of spinach. Let it cool & grind to form a fine paste

For Preparation:

4 tablespoon cooking oil
Whole garam masala  (cardamom, black pepper, black cardamom, cloves, cinnamon & bay leaves)
4 big sized onion
2 medium sized tomatoes
1 tablespoon coriander powder
 2 tablespoon garam masala powder
1 teaspoon turmeric powder
2 tablespoon red chilly powder
Salt (as per taste)

Method :

1    1.  Marinate chicken with lemon juice , turmeric powder & curd. Mix well and rest it for atleast half an hour.If time permits can keep it for more time as well.
2.  In a kadhai/Pan heat oil. Once oil is heated add whole garam masalas (cardamom, black pepper, black cardamom, cloves, cinnamon & bay leaves). Frying whole spices in oil releases their essential oils.
3.  Add finely chopped onions & sauté until it turns golden brown in colour. Add little salt so that onion gets cooked fast.
4.  Once onions are cooked, add grounded green masala to it.
5.    For about 15-20 mins sauté this mixture in slow flame. Stir occasional in order to avoid burning of masala
6.  Once oil starts oozing out from the masala, it indicates that it is cooked.
7.  Now add turmeric powder, coriander powder, red chilli powder, and saute for 2 mins .
8. Add chopped tomatoes and cook until it is mushy.
9. Finally add marinated chicken in this mixture of masalas and cook for atleast 15 mins
10.  Once chicken is almost cooked now add salt , garam masala powder & Spinach puree to it.
11.  Add water if required & Cook only for 5-7 mins more since Spinach/palak was already boiled.
12.  Now this tempting rich and delicious Murg Palak is ready to be relished

Serving- Garnish with onion rings & a slice of lemon . Enjoy this soulful dish with roti, paratha, pav or rice.
Serves 6-7 Pax.


Notes/Tips :

  • To get the perfect rich green texture of the gravy, do not overcook the spinach .Overcooking may lead to darkening of the puree.
  • If you are cooking in the pressure cooker , 2 whistles is more than enough to cook the chicken. Later once the pressure is released add spinach puree and cook further for about 5-7 mins by then the chicken will be well cooked
  • If time permits marinate the chicken overnight, you will be amazed to see the result.

A very easy to cook boiled egg dish which anyone can try.
Spiced up with onions, tomatoes, chillis and so on. Can enjoy this mouth watering dish with Pav, chapati, paratha or as a side dish with rice.

Boiled Egg Sabji/Bhurji
Anda Bhurji Boiled
Stove to Serve Time: Approx 15 mins

Ingredients:

4 hard boiled eggs (cut medium sized cubes)
2 tbsp oil
1 tsp Cumin seed
2 Green chillies
Curry leaves
1 tsp Turmeric powder
1 big sized Onion (finely chopped)
1 tbsp ginger garlic paste
1 Medium size Tomato (finely chopped)
1 tsp Garam Masala
Salt as per taste
Coriander leaves

Method:

1.       Take a pan , heat oil in medium flame. Once oil is heated add cumin seeds,green chillis, curry leaves, turmeric powder,add onions and sauté it until onion turns golden brown
2.        Now add ginger garlic paste, tomatoes, salt as per taste & stir well.
3.       Cover and cook this masala for 2-3 mins
4.       Add garam masala, give it a nice mix
5.       Finally add 4 hard boiled eggs cut into medium sized cubes. Cook for about 1 min

Serving- Garnish with fresh coriander leaves. Serves 2-3 Pax.

Carrots have a number of health benefits.
Cooking a healthy veggie dish need not be taxing. Here is a simple, yummy & delicious carrot sabji with a dash of coconut and lots of love

Simple Carrot Sabji/Bhaji (South Indian Style)

Stove to Serve Time: Approx 15 mins

Ingredients:


250 gms Carrots
2 tbsp grated coconut
3-4 cloves garlic
1 tbsp cumin seeds
1 tsp mustard seed
½ Turmeric powder
1 tsp Split black gram Lentils
2 Dry red chillies
1 pinch Asafoetida
Curry leaves
Coriander

Method:

1.        Over medium heat, heat oil in a pan . Once oil is hot add mustard seed, cumin seed, split black gram lentils, garlic, curry leaves , dry red chillis & turmeric powder . Mix and sauté well for around 1-2 mins.Add a pinch of asafoetida.
2.       Now add chopped carrots cut in cubes and stir well.
3.       Add salt as per taste
4.       Cover & Cook for 3-4 mins, stirring occasionally until carrots are cooked.
5.       Add grated coconut, cook for about 1 min.
6.       Dish is ready to be served.


Serving: Garnish with fresh coriander leaves. Can enjoy with rice or chapati.
Serves 3-4 Pax.

Marinated mutton with lots of spices and served with fresh coriander leaves and lots of love. Popular in north India, a great side dish with roti, paratha or rice. It’s simple but tastes really delicious. 



Delicious Mutton Gravy (Spicy)
Stove to Serve time: Approx 50 mins- 1 hr.

Ingredients

For Marinating:
500 gms mutton
1 1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 tablespoon red chilly powder
1 tablespoon ginger garlic paste
3 tablespoon curd

For Preparation:
4 tablespoon mustard oil/any cooking oil
Whole garam masala  (cardamom, black pepper, black cardamom, cloves, cinnamon & bay leaves)
1 inch Ginger and 4 - 5 cloves garlic (sliced)
3 - 4 green chilly
4 medium sized onion
2 medium sized tomatoes
1 teaspoon cumin powder
 1/2 tablespoon garam masala (optional)
1 teaspoon turmeric powder, 1 tablespoon red chilly powder
Salt (as per taste) and coriander leaves

Method :

1    1. For marinating mutton add turmeric powder, coriander powder, red chilli powder, ginger garlic paste & curd. Mix well and rest it for atleast half an hour.
2.       Take oil in a cooker, you can take any pan as well. Once oil is heated add Whole garam masala  (cardamom, black pepper, black cardamom, cloves, cinnamon & bay leaves).
3.       Now add sliced ginger , garlic & green chillies.
4.       Add thickly sliced onions, sauté it until it turns translucent.
5.       Now add roughly chopped tomatoes. Keep the flame to medium- high ,mix well until tomatoes becomes mushy
6.        Add cumin powder, turmeric powder, red chilli powder and little garam masala (optional)
7.       Saute it for 2-3 mins until all the spices are cooked well.
8.       Now add the marinated mutton and salt as per taste.
9.       Add 2/3 cups of water (water content depends upon the consistency of gravy you prefer)
10.   Now close the lid of the cooker & let it cook for at-least 7 whistles.

Serving:  Serve hot with garnishing of fresh coriander leaves and rings of onions.Serves 4-5 Pax.
