Aloo tikki recipe

Aloo matar tikki is a famous snack recipe in India made using boiled potatoes, green peas and various spices. It’s a real treat to our taste buds because of its spicy and tangy taste.This simple and easy recipe uses shallow fry technique. It’s crisp from the outside and soft from inside. These tikki's are also called cutlets in western world. You can use bread crumbs or semolina to make it more crispier. Also if you feel like having a veg burger, place this tikki between a nice burger bun and enjoy!

So let’s start with step by step recipe of Aloo Matar Tikki

Preparation time: 15 mins
Cook time: 15 mins
Yields: 8 medium sized tikki's

Aloo matar Tikki Ingredients


2 Big sized Potatoes
1/2 cup frozen / boiled peas
4 tbsp rice powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp amchur (mango) powder/chat masala
1/2 tsp red chilli powder
1/4 tsp Turmeric powder
1/2 tsp Garam masala powder
Salt as per taste
1/2 inch ginger
2 green chilli
Coriander leaves
2 tbsp oil for shallow frying

Method

  • In a bowl grate or mash 2 big sized boiled potatoes.
  • Add 1/2 cup boiled green peas or use frozen peas.
  • 4 tbsp rice powder or cornflour for binding. 
  • Combine well
  • To this add 1 tsp coriander powder, 1 tsp cumin powder, 1 tsp amchoor powder(or chat masala), 1/2 tsp red chilli powder, 1/4 tsp turmeric powder, 1/2 tsp Garam masala powder, salt as per taste, 1/2 inch grated ginger, 2 finely chopped green chilli and coriander leaves. 
  • Mix everything well to form a smooth dough.
  • Divide in 8 equal parts and make patti/tikki shape (for demo check video). If you want crispy aloo tikki, then you can also coat it with breadcrumbs.
  • Heat non-stick pan (tawa) or griddle to shallow fry patties. 
  • When pan or griddle is hot enough, drizzle 1-1 1/2 tbsp oil over it. 
  • Put patties over oil and cook until bottom surface turn golden brown. Serve hot with your favourite chutney

Aloo Mutter and Carrot Sabji

Aloo Mutter Carrot Sabji

Quick and simple meals are always welcome in my home and Aloo mutter being one of them. Here I have added carrots too to give it a healthy twist. The sweet taste of mutter and carrots blend amazingly well together. A simple yet delicious North Indian veg recipe made with basic ingredients and spices. Here is how to make aloo matar carrot recipe step by step.

Ingredients for aloo mutter & carrot recipe

1 cup Green peas
1 Big sized Potato
1/2 cup carrot
1 tbsp Oil
1/4th tsp Mustard seed
1/4th tsp Cumin seed
Curry leaves
2 medium sized onion
2 green chilli (optional)
1 Large Tomato
1 tsp coriander powder
1/2 tsp Cumin powder
1/2 tsp Kashmiri red chilli
1/4th tsp Turmeric Powder
Coriander leaves
Kasuri methi(optional)
Salt as per taste

Method

  • In a pan heat 1 tbsp Oil.
  • Add mustard seeds and cumin seeds, let it splutter.
  • Next add curry leaves and finely chopped onion, sauté well.
  • Adding green chilli is optional.
  • Now add finely chopped tomatoes, salt, coriander powder, cumin powder, turmeric, red chilli powder and sauté well until oil starts oozing out.
  • At this stage add potatoes and cook for 2 mins.
  • Next add green peas and carrot, sauté them for 2 mins.
  • Add water as per the gravy consistency desired, add salt if required.
  • Cook for 10 mins or until the veggies are well cooked. Cut and check if potatoes are well cooked.
  • Now at this stage add Kasuri methi and coriander leaves. Mix well and cook for a minute.
  • Healthy tasty Aloo mutter with carrot sabji is ready.
  • Serve it with hot phulkas or plain rice.

This recipe is ideal for those who have really pressed for time. Instead of opting for a quick fix by ordering food from outside, you can definitely give this a try.

Easy methi bhaji recipe

Methi (Fenugreek leaves) has multiple heath benefits . It is good to reduce cholesterol, prevents bowel problems, curbs diabetes, reduces heart problems, protects from kidney problems, good for skin and hair and many more.

Preparation time : 15 mins
Cook time : 15 mins

Ingredients

1 bunch Methi leaves (Fenugreek leaves) 1/2 cup roasted crushed peanuts 2 green chili 6 cloves garlic 1 medium sized onion 1/2 tsp Cumin seeds 1 tbsp Oil Dry Kasuri methi (optional)


Method


  1. Thoroughly wash & roughly cut the methi leaves
  2. Roast and crush the peanuts.
  3. For cooking in a pan/wok heat 1 tbsp oil
  4. Add cumin seeds, crushed/cut garlic and chili
  5. Add sliced onion and saute them well
  6. Once onion has turned translucent add methi leaves & salt as per taste
  7. Methi gets cooked very fast, once the volume is reduced add peanut powder.Kindly note peanut powder reduces the bitterness of methi. Still if you find methi bhaji bitter you can add little sugar/jaggery to it
  8. Cook for about 10 mins and your delicious methi bhaji is ready to be served.
  9. Serve hot with roti/chapati or rice.

Bored with regular dal, here is a simple yet tasty Dal(Tur) Fry recipe. It is one of the basic and simplest of Indian cuisines. Tur dal / split pigeon peas pressure cooked with onion, tomatoes and spices to tingle your taste buds. Below is the detailed method of making Dal Fry recipe.

Dal Fry Receipe/Split Pigeon Peas

Dal Fry/Lentils
Cooking Time- 25 mins

Ingredients: 

1 cup tur dal/split pigeon peas
2 tbsp ghee/Vegetable oil
1 large chopped onion
1 medium chopped tomato
2 green chili
5 - 6 cloves of garlic
Small piece or half inch ginger
2 Kashmiri red chilli
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chilli powder
A pinch asafoetida (hing)
1/2 teaspoon garam masala (optional)
 Coriander leaves
Salt to taste

Method:

1.       Wash & Soak 1 cup tur dal / split pigeon peas in water for around 30 mins
2.       Cook in pressure cooker with 2 cups of water for 3 whistles.
3.       After 3 whistle let it rest for 15 mins until the pressure/steam releases completely
4.       Now open the lid and transfer the dal in a bowl
5.       In a pan take 2 tbsp of ghee/oil , on medium flame once ghee is hot add cumin seeds, dry red chilies, finely chopped ginger garlic,hing & onions. Sauté them for about 3-4 mins until onion turns translucent. Then add finely chopped tomatoes, turmeric powder, red chili powder, salt & green chilies. Mix well for about 2-3 mins.
6.       Finally add the pressure cooked dal , if required can add little water for the consistence
7.       Cook for about 5-6 mins and sprinkle few coriander leaves.
8.       Dal fry is ready to be served

Serving- Can serve 4-5 people.
Garnish with fresh coriander leaves and a dollop of butter to enhance the taste.

Carrots have a number of health benefits.
Cooking a healthy veggie dish need not be taxing. Here is a simple, yummy & delicious carrot sabji with a dash of coconut and lots of love

Simple Carrot Sabji/Bhaji (South Indian Style)

Stove to Serve Time: Approx 15 mins

Ingredients:


250 gms Carrots
2 tbsp grated coconut
3-4 cloves garlic
1 tbsp cumin seeds
1 tsp mustard seed
½ Turmeric powder
1 tsp Split black gram Lentils
2 Dry red chillies
1 pinch Asafoetida
Curry leaves
Coriander

Method:

1.        Over medium heat, heat oil in a pan . Once oil is hot add mustard seed, cumin seed, split black gram lentils, garlic, curry leaves , dry red chillis & turmeric powder . Mix and sauté well for around 1-2 mins.Add a pinch of asafoetida.
2.       Now add chopped carrots cut in cubes and stir well.
3.       Add salt as per taste
4.       Cover & Cook for 3-4 mins, stirring occasionally until carrots are cooked.
5.       Add grated coconut, cook for about 1 min.
6.       Dish is ready to be served.


Serving: Garnish with fresh coriander leaves. Can enjoy with rice or chapati.
Serves 3-4 Pax.
