French Beans are as
healthy as one can get when it comes to vegetarian dishes.
Here is my crunchy and delicious recipe with a dash of crushed peanuts and stir fried potatoes.

Healthy French Beans Recipe

to Serve Time: Approx 25 mins.
Ingredients
300 gms French beans
2 tbsp Cooking Oil
1 tsp Cumin seed
2 chopped green chillies
4-5 cloves finely chopped garlic
1 medium size Onion
2 medium size chopped potatoes
½ tsp turmeric powder
1 tbsp roasted peanut powder
1 medium size tomato
½ tbsp garam masala powder
Curry leaves
Coriander leaves
Pinch of asafoetida
Salt as per taste
Method:
1.
Heat 2 tbsp oil in a pan. Add cumin seeds, green
chillies, curry leaves, pinch of asafoetida, and we have used chopped garlic
instead ginger garlic paste so as to get the fresh taste of garlic.

Add chopped onions sauté it till it turns
translucent.
3.
Now add potatoes and turmeric powder to it and
fry for atleast 2-3 mins.
4.
Add chopped
French beans and salt as per taste.
5.
Add 1 tbsp roasted peanut powder as it enhances
the taste of our dish
6.
Cook for atleast 5-7 mins, stirring
occasionally. Do not overcook the vegetables to retain the crunchy taste.
7.
Now add one medium size chopped tomatoes and
garam masala powder, cook for 2 mins.
8.
Garnish with fresh coriander leaves.
Serves 3-4 Pax.
