Monsoon special: Chicken PakodaChicken pakoda

Delicious, flavorful & crunchy chicken appetizer that takes just 15 minutes. Chicken pakora is a crisp fried appetizer made with chicken, gram flour, ginger garlic, spice powders & herbs. These addictive, delicious & crunchy chicken bites is not only flavor packed but also tender & juicy.

Ingredients 


  • 300 grams Boneless CHICKEN strips or cubes
  • 1 tablespoon onion (finely chopped) 
  • 1 to 2 green chilies chopped 
  • 1 tablespoon GINGER GARLIC PASTE or crushed
  • 1 teaspoon red chili powder (reduce for kids)
  • 1/2 tsp Garam masala powder
  • 1/2 tsp Fennel seeds 
  • 1/2 tsp crushed coriander seeds/ powder
  • ¾ to 1 teaspoon GARAM MASALA
  • ¼ teaspoon turmeric or haldi powder
  • Salt (adjust to taste)
  • 2 sprigs curry leaves and coriander leaves chopped
  • 5 tablespoon besan or gram flour (¼ cup + 1 tbsps)
  • 1 tablespoon rice flour or corn flour
  • 1 tablespoon water (you may need more)
  • 1/2 Lemon juice 
  • Oil to deep fry

Method:

  • Combine all the ingredients mentioned above along with Chicken pieces and 1 tbsp Oil. Use little water if needed.
  • Keep it aside to marinate for about 30 mins
  • Next Heat oil in a pan for deep frying
  • Once oil is hot...lower the flame from medium to low and drop chicken pieces 
  • Fry until the pakodas are golden brown and crisp
  • Sprinkle some chat masala and serve hot with mint chutney or masala chai
Note:
Do not keep the flame high while frying the chicken, it may cook the outer crust and the chicken pieces inside may remain uncooked.

Jhatpat Chicken Curry

Chicken curry

This recipe is my style of Chicken curry made in jiffy without compromising on taste. Ideal for people who are always on the go. It can be made within 30 minutes of time. So next time if any guests come without prior intimation, don’t worry! This recipe is perfect for you. Guests will not stop praising you. Bachelors and beginners who are new with cooking can easily make this spicy delicacy.

Prep time : 10 mins
Cook time : 20 mins
Serves : 4-5 Pax 

Ingredients 

600 gms Chicken 
2 tsp Turmeric powder
1 tbsp Kashmiri red chilli powder 
1 tbsp garam masala powder/ Chicken masala 
1 tbsp Ginger Garlic paste 
1 tsp Cumin seeds
Whole spices (cardamom, cinnamon, cloves, pepper)
4 tbsp curd 
1 Large Onion 
1 medium sized Tomato 
3 Green Chilli 
2 tbsp Oil
Salt as per taste
Coriander leaves
Kasuri methi(optional)

Method: 

  • Marinate chicken for atleast 15-20 mins with curd, turmeric powder, ginger garlic paste and salt. If time permits you can marinate for more time.
  • Until chicken gets marinated, In a pan heat 2 tbsp oil add Cumin seeds and whole spices, sauté well.
  • Next add finely chopped onion and salt, sauté until they turn golden brown.
  • Add coriander leaves, finely chopped tomatoes, turmeric powder, chilli powder and ginger garlic paste. Sauté well until the masala oozes out oil. You can also add some green chilli (optional)
  • At this stage add marinated chicken. Sauté  for 5 mins
  • Next add water as per the consistency you require. Cover lid and Cook for 10 mins or until chicken is well cooked.
  • Finally add garam masala, kasuri methi and cook for 2 mins
  • Garnish with Coriander leaves and serve hot with roti or rice..Enjoy !

Easy Butter Chicken
Butter Chicken

The creamiest and drool worthy north Indian Dish is now been made easy. Make creamy and better than restaurant style butter chicken at home easily. This dish will make your loved ones fall in love with your cooking style.Butter chicken is also called Murgh makhani . Vegetarians can make this dish by using paneer instead of chicken. The ingredient or masala for butter chicken and butter paneer/paneer makhani is same.

Preparation time : 30 mins
Cook time : 45 mins 
Serves : 4-5 Pax

Ingredients 


For marination 
600 gms Chicken 
1/2 lemon 
2 tbsp curd
2 tsp Ginger garlic paste
1 tsp red chilli powder 
Salt 

Sauté and Grind
1 tsp oil
1tsp ginger garlic paste
1 Large Onion
15-16 Cashew nut
2 medium sized Tomato 
1 tsp sugar
Salt as per taste 

Cooking 
1 tsp Oil
2 tbsp Butter
1 tsp Kashmiri red chilli powder 
1/4 tsp Haldi powder
1 tsp Coriander powder
1/2 tsp Cumin powder 
1/2 tsp Garam Masala powder
3 tbsp Cream
Kasuri methi 
Water as required 

 Method:


  • Marinate chicken with lemon juice, ginger garlic paste, red chilli powder, curd and salt as per taste.
  • Mix well and coat all the ingredients well with chicken. Keep it aside for at least half an hour.
  • Until chicken gets marinated let’s prepare the masala. In a pan add little oil and heat it in medium flame.
  • Once oil is hot, sauté ginger garlic paste and onions.
  • Once onions turn translucent, add cashew nuts, tomato, salt and sugar.
  • Turn off the flame once tomatoes turn mushy. Keep it aside to cool down.
  • Once the masala is cooled grind them into a smooth paste.
  • With the help of strainer, strain these masala so as to get a super smooth texture. You will see only skin of tomatoes left behind. This masala will help our butter chicken to get that super creamy texture (watch the video at 3.12 seconds to get a better idea)
  • Now in the same pan heat little oil and generous amount of butter. Keep the flame medium 
  • Add marinated chicken and sauté them until they turn brown and nicely cooked. For me it took around 15 mins to cook the chicken 
  • Keep these chicken pieces aside and in the same pan add little butter, Kashmiri red chilli powder and turmeric powder. Sauté them for about a minute. Adding red chilli powder to butter / oil enhances the colour of the gravy.
  • Next add the grounded masala and cook them only for 2 minutes since we have already cooked our masala. 
  • To this add Coriander powder, cumin powder and Garam Masala powder; sauté for about 2 mins
  • Finally add chicken pieces, fresh cream and dried fenugreek leaves (Kasuri methi). 
  • Cover the lid and cook for about 2-3 minutes.
  • Creamy rich Butter chicken is ready to be relished.  

Garnishing:
Garnish with cream, onion rings, lemon wedges and serve hot with laccha paratha, naan or roti



Notes/ Tips:
  • I have not used salt while cooking since we had already added salt during marination and in our grounded masala. I would suggest you’ll to check the salt content in the last stage and adjust accordingly
  • You can also grill the chicken pieces instead of shallow frying.
  • You can skip the straining process if you are falling short of time. But would definitely suggest to  do it since this process removes all the unwanted seeds and skin leaving behind a smooth texture
  • You can use boneless chicken instead of chicken with bones
  • I have roasted Kasuri methi (dried fenugreek leaves) so that it gets powdered easily.

CHICKEN FRY!!!
The name itself makes you drool J Here is a very simple and juicy chicken recipe made with all the basic items available at home.

Chicken Fry/Desi style
Chicken Fry Desi style
Stove to Serve Time: Approx 30 mins

Ingredients

700 gms chicken
1 tbsp Cumin Powder
1tbsp Turmeric Powder
1 tbsp coriander Powder
1 tsp Black pepper powder
3 tbsp Kashmiri Mirch powder
3 tbsp Ginger Garlic paste
2 tbsp Cornflour
1 egg
1 lemon juice
Kasuri methi
Oil
Salt as per taste

Method:

  1.      Brine the chicken with salt and water for atleast 30 mins. Brining will make the chicken tender and juicy/moist. (Optional if pressed for time)2.       Marinate the chicken with lime juice, turmeric powder,chilli powder,ginger garlic paste,pepper powder,cumin powder, coriander powder,egg, little dried kasuri methi and salt as per taste.Mix all these ingredients well with chicken & keep it for marination for atleast 30 mins
    3.       Once chicken is marinated well add cornflour & mix it well.
    4.       Take oil and heat the pan in medium high flame.
    5.       Once the oil is hot. Now put one by one chicken pieces in the pan.
    6.       Cover the lid & fry the chicken in medium flame for 10 mins. Covering the lid will help the chicken to get well cooked from inside.
    7.       After 10 mins open the lid & turn over the chicken to other side.Cook for about 5 mins.
    8.       Once the chicken has turned nice & golden brown off the flame.
    9.       Chicken fry is ready to be relished
    10.   Garnish with onions and lemon wedges



Serving- Serve hot with green chatni or can enjoy it without any dips.
