Simple Carrot Sabji/Bhaji (South
Indian Style)
Ingredients:
250 gms Carrots
2 tbsp grated coconut
3-4 cloves garlic
1 tbsp cumin seeds
1 tsp mustard seed
½ Turmeric powder
1 tsp Split black gram Lentils
2 Dry red chillies
1 pinch Asafoetida
Curry leaves
Coriander
Method:
1.
Over
medium heat, heat oil in a pan . Once oil is hot add mustard seed, cumin seed,
split black gram lentils, garlic, curry leaves , dry red chillis & turmeric
powder . Mix and sauté well for around 1-2 mins.Add a pinch of asafoetida.

Now add chopped carrots cut in cubes and stir
well.

Add salt as per taste

Cover & Cook for 3-4 mins, stirring
occasionally until carrots are cooked.
5.
Add grated coconut, cook for about 1 min.
6.
Dish is ready to be served.
Serving: Garnish with fresh coriander leaves. Can enjoy with
rice or chapati.
