The Foodie Curls Indian Recipes

Mutton Vade

mutton vade

Mutton vade is a traditional cuisine from the western state of India, specially from Malvan region of Maharashtra. This gravy or mutton rassa gets its flavor from the vivid blend of spices and dry roasted coconut and obviously lamb which is used during the preparation. The vade on the other hand is a mixture of flours from rice, wheat, corn, sorghum (jowar), pearl millet (bajra), split chickpeas (chana dal), black gram lentils (urad), dry fenugreek (methi) and coriander. This mixed vade flour can be bought ready-made from stores. Let me now proceed with how to make mutton vade.

Ingredients

Mutton - 1kg
3 onion - finely chopped
pinch of asafoetida
3 tbsp oil
salt to taste
Coriander leaves

To make coconut - onion paste

Fresh grated coconut
2 onion - sliced
7-8 cloves of garlic
1 inch ginger piece
1/4 cup chopped coriander
Cinnamon stick
1 tsp peppercorns

Dry roast grated coconut little bit. Grind all above ingredients to make smooth paste by adding little water.

For Marination
Malvani Masala
1 tsp lemon juice
1tbsp ginger

Add above ingredients to mutton pieces and mix well. Let mutton marinate for 1-2 hours in a refrigerator.

Procedure
  • Heat oil in a pan. Add chopped onion and saute till it becomes translucent. Add pinch of asafoetida.
  • Now, add marinated mutton and salt to taste. Cover the pan and let it cook for 20 minutes. Keep stirring in between.
  • Now add coconut-onion paste and mix well. Let it cook for about 30 minutes till oil starts oozing out.
  • Then add 2 cups of hot water. When curry comes to boil, reduce the heat and let it simmer on low heat for about 8-10 minutes.
Serve hot with Malvani vade (wade), chapati or plain rice.

Ingredients:
  • 1 tsp Coriander seeds
  • 1 tbsp Methi seeds
  • 1/2 cup Urad dal
  • 1 cup Rice flour
  • 1/4 cup Gram flour
  • 1/2 tsp Turmeric powder
  • Salt to taste
  • 1 tbsp Oil
  • 1/2 tsp Cumin seeds
Method
  • In a mixer powder the urad dal finely. Also powder the methi seeds, cumin seeds and coriander seeds. Put it in a mixing bowl along with the powdered urad dal.
  • To this add in the rice flour, gram flour, turmeric, oil and salt.
  • Mix everything well. Add warm water to knead the dough as needed and make a stiff dough.
  • Cover and set aside to for around 15 minutes.
  • Heat oil for frying. Take a plastic bag and apply oil on it. Now take small portion of the dough and form a ball. Place the ball on the plastic and press to form a poori. You might have to dip your hands in water to prevent the dough from sticking to your hand. So keep some warm water close by. Carefully take the vada off the plastic and fry on both sides.
  • Drain excess oil on paper towel and serve hot with mutton curry

Blueberry Chocolate

Blueberry chocolate

Hi guys, I'm back with another chocolate recipe. I somehow could not take my mind off chocolates of late and the best ones are those which have those amazing fillings in them. Here I have infused these dark chocolate delights with blueberry sauce. Dark chocolate and blueberries are a natural combination. The tangy, sweet tart blueberry sauce and the slightly bitter dark chocolate go so well together.
I always make homemade blueberry sauce. It’s so super easy, there’s really no reason not to. With the blueberry sauce leftover, I usually use it as a topping on bread or in any desserts

Make these for your holiday get together, birthday, anniversary and I promise you and your guests won’t be disappointed. For more dessert options, check out my No oven Eggless Chocolate cake and 3 ingredients Biscuit cake

Preparation time: 20 mins
Cook time: 15 mins
Total time: 35 mins
Yields: 20-22 Chocolates

Ingredients

250gms Dark compound Chocolate/semi dark chocolate
100 grms Blueberries
2 tbsp Sugar
1/2 tsp Cornflour
1/2 cup water
Nutmeg powder(optional)

  • After 10 mins you will notice the syrup will turns more thicker
  • You can store this sauce in a airtight jar for about 15-20 days

Chocolate

  • Now let’s start preparing chocolate. Cut the chocolate bar into pieces and place it in a thick bottom glass or metal bowl.
  • With a double boiler, bring some water to a simmer in a pot and then fit the glass or metal bowl over the top of the pot. The steam from the simmering water will heat the chocolates in the bowl.

  • Invert the mold on the bowl and tap it until it forms the outer layer/crust of the chocolate (watch video for process)
    chocolate mold

  • Take the pieces out and munch away!

Note/Tips

  • Try to use a deeper mold, it will be easy to fill in the sauce and will also fetch good results
  • You can use any chocolate (dark, milk etc) of your choice
  • If blueberry is not readily available you can use any berries or nuts (like almond or peanuts) of your choice
  • It took 5 hours for me to set the chocolate. It may vary accordingly.
  • Total time does not include cooling time for the chocolates.

Of one of the many delicacies which are native to the southern Karnataka region of Tulunad (Tulunadu), Neer Dosa is one of the most noticeable and the simplest. Neer Dosa gets its name from the word 'Neer' which means water in Tulu language due to it's watery consistency. Like other dosa recipes available in the region of southern India, neer dosa does not require overnight fermentation and can be made instantly.

Neer Dosa / Rice Crepe

Neer Dosa
Stove to serve : 20 mins

Ingredients
2 cups Soaked Regular Rice
Cooking Oil
Salt

 Method:

1.     No need to ferment the rice to make Neer Dosa
2.     The rice needs to be soaked for atleast 2 hours
3.     After wash drain the water & ground by adding water & salt as per taste to get a very fine batter
4.     Take it in a bowl & add one more cup of water to get a flowing & thin consistency
5.     Heat the pan, spread little oil & pour the batter evenly on the pan. The batter will sizzle and flow to spread itself. Fill in the batter where there are gaps.
6.     Cover the lid & let it cook for about 30 seconds, Neer Dosa cooks very quickly, when you notice the top of the Dosa is no longer raw, the Neer Dosa is cooked and has a rich white colour.
7.     With the help of flat spatula slide from the sides of the pan and fold the Neer Dosa into half and then into another half to form a triangle. Similarly make other Neer Dosa’s following the same method.
8.     Make sure you place the Neer  Dosa’s away from each other when they are hot, as they tend to stick to each other.
Serve warm, with coconut chutney, sambhar, chicken gravy or can have plain with tea as well.
Serves 4 Pax
