Tawa Prawns Masala

The sizzling sound combined with the aroma of spices and prawns on a hot tawa is simply a heavenly feeling. Prawns Tawa masala also know as Kolambi masala in Maharashtra is one of the famous spicy and tangy dishes. This is a very easy and simple recipe. As the name suggests it is to be made on skillet. Marinated prawns is cooked in spices. This is a very quick recipe and requires very few ingredients. You can eat it with roti, rice, rice bhakri, pav bread or any other bread of your choice. Do try this recipe at home and write me back. Prep time: 10 mins
Cook time: 15-20 mins
Serves: 3Pax

Ingredients 

14-15 medium sized prawns
1 tsp turmeric powder 
2 tbsp oil
2 medium sized onion
1 tsp Ginger Garlic paste
1 1/2 tsp red chilli powder/ as per spice 
1 tsp Garam masala
2 green chilli (optional)
1/2 lemon juice 
Salt as per taste
Coriander leaves

Method 

  • Firstly clean and de-vein prawns, marinate with salt and turmeric powder for atleast 15 minutes

  • In a iron tawa or pan heat 2 tbsp oil

  • Add finely chopped onions and fry until golden brown
  • To this add ginger garlic paste and fry well

  • Next add 1/2 tsp turmeric powder, red chilli powder, Garam masala and salt as per taste

  • Fry them for about a minute and add slit green chilli (optional)

  • Now add marinated prawns and coat well with the masala’s

  • Squeeze 1/2 lemon juice over it and cover and cook the prawns

  • After 5 minutes flip the prawns and cover again

  • It took about 7-8 mins for the prawns to cook

  • Garnish with coriander leaves and serve hot

Notes / Tips:

  • Adjust the spice level as per your taste 
  • Instead of lemon juice you can also add tamarind juice or kokam 
  • Do not overcook the prawns or else it will turn chewy 
  • You can also add coriander powder and Malvani powder but I have skipped it since I believe too many spices will kill the natural taste of prawns

Mutton chops
Grilled Mutton chaap/chop is a rich Mughlai / Awadhi dish and is usually served along with biryani or roomali roti. Slow cooking makes it absolutely delicious and juicy. Usage of oil is very less since I have grilled the chops instead of frying them. Do give it a try and share your experience with me.

Ingredients 

  • 500 gms Mutton (use tender mutton chops/goat ribs for this recipe)
  • 1 Black and 3 green Cardamom 
  • Cinnamon sticks 
  • 1 Mace
  • 3-4 Cloves
  • 7-8 peppercorns 
  • 2 medium sized Onion
  • 1/2 tsp Turmeric 
  • 2 tbsp Ginger Garlic paste 
  • 2 tbsp Curd
  • 2 tsp Red chilli powder
  • 1/2 tsp Garam masala
  • 1/2 tsp crushed peppercorns 
  • 1/2 tsp Cumin powder
  • 2 eggs
  • 2 tbsp Corn flour 
  • 3 tbsp milk
  • Dry fenugreek leaves(optional)
  • Oil 
  • Salt as per taste
Method 
  • In a pan heat around 1 tbsp oil add whole spices and sliced onion; sauté it until onion turns translucent
  • Now add mutton pieces and fry it for 5 minutes.
  • Next add 1 tsp red chilli powder, 1/2 tsp turmeric powder and 1 tbsp Ginger Garlic paste. Sauté for couple of minutes until the raw smell of garlic is no longer present.
  • Add salt and 1/2 cup water 
  • Cover and cook it in slow flame for about 40 minutes.
  • Keep on stirring the mutton pieces every 10 minutes 
  • Once chop is cooked ensure that the water has completely evaporated. After which, let it cool for sometime
  • Until then make the masala/coating. In a bowl take 2 tbsp curd, 1 tbsp Ginger Garlic paste, 1/2 tsp Garam masala, 1/2 tsp Cumin powder, 1/2 tsp crushed peppercorns, 1/2 tsp Chilli flakes or chilli powder, dry fenugreek leaves (optional) salt as per taste. Mix them well
  • Apply and coat on all the mutton pieces with this masala well. Keep it aside.
  • In other bowl take 2 tbsp Cornflour and add around 3 tbsp milk to make it a lumpfree paste/slurp.
  • Break two eggs in a bowl add little chilli powder. Beat well and keep it aside
  • Now our chops are ready to be grilled. Dip each chop in the Cornflour slurp and then in the egg.
  • Place it in a preheated grill pan. Use around 1 or 2 tsp oil to grill the mutton chops
  • Keep on turning the pieces so that the chops are cooked evenly 
  • Serve this grilled charred mutton chop hot as it is or with naan or rice.

Note 
  • If you are falling short of time, Instead of slow cooking you can cook the chops in pressure cooker for about 6-7 whistles or it depends upon the quality of the mutton 
  • Try buying tender mutton but if you don’t find it other alternative to make it tender is by applying papaya paste on the mutton pieces about 2-3 hours. It acts like a tenderiser 
  • Here I have used grill pan to reduce the usage of oil content. You can also shallow fry it in a Tawa

Step by Step procedure with picture:

  • Until then make the masala/coating. In a bowl take 2 tbsp curd, 1 tbsp Ginger Garlic paste, 1/2 tsp Garam masala, 1/2 tsp Cumin powder, 1/2 tsp crushed peppercorns, 1/2 tsp Chilli flakes or chilli powder, dry fenugreek leaves (optional) salt as per taste. Mix them well
    Paste
  • Apply and coat on all the mutton pieces with this masala well. Keep it aside.
    Coating
  • In other bowl take 2 tbsp Cornflour and add around 3 tbsp milk to make it a lumpfree paste/slurp.
    Corn flour
  • Break two eggs in a bowl add little chilli powder. Beat well and keep it aside
    Eggs
  • Now our chops are ready to be grilled. Dip each chop in the Cornflour slurp and then in the egg.

  • Place it in a preheated grill pan. Use around 1 or 2 tsp oil to grill the mutton chops
    Lamb chop turn
  • Keep on turning the pieces so that the chops are cooked evenly
  • Serve this grilled charred mutton chop hot as it is or with naan or rice.

Bored with regular dal, here is a simple yet tasty Dal(Tur) Fry recipe. It is one of the basic and simplest of Indian cuisines. Tur dal / split pigeon peas pressure cooked with onion, tomatoes and spices to tingle your taste buds. Below is the detailed method of making Dal Fry recipe.

Dal Fry Receipe/Split Pigeon Peas

Dal Fry/Lentils
Cooking Time- 25 mins

Ingredients: 

1 cup tur dal/split pigeon peas
2 tbsp ghee/Vegetable oil
1 large chopped onion
1 medium chopped tomato
2 green chili
5 - 6 cloves of garlic
Small piece or half inch ginger
2 Kashmiri red chilli
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chilli powder
A pinch asafoetida (hing)
1/2 teaspoon garam masala (optional)
 Coriander leaves
Salt to taste

Method:

1.       Wash & Soak 1 cup tur dal / split pigeon peas in water for around 30 mins
2.       Cook in pressure cooker with 2 cups of water for 3 whistles.
3.       After 3 whistle let it rest for 15 mins until the pressure/steam releases completely
4.       Now open the lid and transfer the dal in a bowl
5.       In a pan take 2 tbsp of ghee/oil , on medium flame once ghee is hot add cumin seeds, dry red chilies, finely chopped ginger garlic,hing & onions. Sauté them for about 3-4 mins until onion turns translucent. Then add finely chopped tomatoes, turmeric powder, red chili powder, salt & green chilies. Mix well for about 2-3 mins.
6.       Finally add the pressure cooked dal , if required can add little water for the consistence
7.       Cook for about 5-6 mins and sprinkle few coriander leaves.
8.       Dal fry is ready to be served

Serving- Can serve 4-5 people.
Garnish with fresh coriander leaves and a dollop of butter to enhance the taste.

CHICKEN FRY!!!
The name itself makes you drool J Here is a very simple and juicy chicken recipe made with all the basic items available at home.

Chicken Fry/Desi style
Chicken Fry Desi style
Stove to Serve Time: Approx 30 mins

Ingredients

700 gms chicken
1 tbsp Cumin Powder
1tbsp Turmeric Powder
1 tbsp coriander Powder
1 tsp Black pepper powder
3 tbsp Kashmiri Mirch powder
3 tbsp Ginger Garlic paste
2 tbsp Cornflour
1 egg
1 lemon juice
Kasuri methi
Oil
Salt as per taste

Method:

  1.      Brine the chicken with salt and water for atleast 30 mins. Brining will make the chicken tender and juicy/moist. (Optional if pressed for time)2.       Marinate the chicken with lime juice, turmeric powder,chilli powder,ginger garlic paste,pepper powder,cumin powder, coriander powder,egg, little dried kasuri methi and salt as per taste.Mix all these ingredients well with chicken & keep it for marination for atleast 30 mins
    3.       Once chicken is marinated well add cornflour & mix it well.
    4.       Take oil and heat the pan in medium high flame.
    5.       Once the oil is hot. Now put one by one chicken pieces in the pan.
    6.       Cover the lid & fry the chicken in medium flame for 10 mins. Covering the lid will help the chicken to get well cooked from inside.
    7.       After 10 mins open the lid & turn over the chicken to other side.Cook for about 5 mins.
    8.       Once the chicken has turned nice & golden brown off the flame.
    9.       Chicken fry is ready to be relished
    10.   Garnish with onions and lemon wedges



Serving- Serve hot with green chatni or can enjoy it without any dips. 
Serves 4-5 Pax
