Poha Chivda Easy Recipe

A traditional Maharashtrian or North Karnataka spicy snack made with thin flattened rice and other spices. It is popularly consumed as an evening snack with a cup of tea, but can also be served as a combo with Upma or pohe recipe. It is simple yet easy to prepare, and easily last longs for a couple of weeks.

This Poha chivda | Poha Namkeen is sweet and spicy, basically an "Indianized" version of a trail mix. Learn how to make this healthier, guilt-free snack with few teaspoons of oil which is just as good at the traditionally prepared, deep-fried poha chivda.

Poha Chivda too is done in multiple ways and the main difference at times is the way the poha is cooked. Many like to fry it and use it in the mix. To make it healthier and to avoid all that oil, we simply roast it. Do not worry it will taste delicious and I bet you will definitely be craving for more.  I love this Roasted Poha chivda so much. It comes in handy for your tea time snack and so easy to make and bursting with flavors. You can also add roasted Makhana or any dry fruits of your choice

Banana Malpua Recipe

Banana Malpua
Malpua is an Indian pancake-like-dessert which is made of rice flour / maida in oodles of ghee / oil and sugar syrup. The traditional sweet has been a festive staple since time immemorial. For the longest time in Indian households, Malpuas were associated with celebrations or was prepared when there was a good news or when someone visited home from far abroad. Adding banana in the batter is more of a Bihari and Oriya thing. In UP & Rajasthan, it's not added.

Malpuas history goes back to the ancient Vedic times. Some food Historians also dub the sweet dessert as one of the oldest desserts of the Indian subcontinent.

Preparation time: 10 mins
Cook time: 20 mins
Fetch: 12 malpuas (medium size)

Method:
  • Take 1 cup hot milk add 1/2 cup sugar to it. Keep it aside for 10 mins to dissolve
  • Mash 2 ripe bananas and keep it aside
  • Now once the sugar gets dissolved add 2 tbsp semolina to it
  • Add 1 cup all purpose flour gradually, make sure there shouldn’t be any lumps. I have made use of the the whisk for lump free batter
  • Add mashed bananas and 2 tsp fennel seeds and nuts of your choice to the batter
  • Mix everything well, cover and keep the batter ad side for 15 mins
  • Until then prepare sugar syrup

For Sugar Syrup:
  • Heat a pan, add 1 cup of sugar and 1 cup of water, let it boil.
  • When the syrup starts boiling, add lemon juice and simmer the heat to the medium flame. You can add saffron (optional)
  • Boil it for another 10 mins, Stir in between to check the consistency of syrup.
For frying:
  • In a shallow pan heat oil for deep frying
  • Mix the batter and pour a small ladle full (approx 2 tbsp) in the hot oil. (The oil should not be too hot)
  • Simmer the heat to low and fry the malpua on both the sides till golden brown.
  • Remove from oil and dip in the sugar syrup for 2 minutes.
  • Serve hot as such or with rabdi.

Notes/Tips:
  • Make sure the batter is lump free and smooth.
  • You can use ghee instead of oil
  • The oil should be very moderately hot. Do not fry the fry the Malpua in very hot oil otherwise they will be raw from inside.
  • Try to use a shallow non stick pan to fry the Malpua.
  • A good malpua is crispy on the edges and soft in the centre.
  • The sugar syrup should be very hot when we soak the malpua in it.

Preparation time: 15mins
Cook time: 15mins
Serves: 3-4 Pax

Ingredients (1 cup = 250 ml)

For white sauce

2 tbsp Butter
2 tbsp All purpose flour(Maida)
Pinch of Nutmeg/Jaifal
500 ml milk (2 cup)
1 tsp Chilli flakes
1 tsp oregano
1/2 tsp crushed pepper
1/2 cup Grated cheese(optional)
Salt to taste

For veggies

1 tsp Olive Oil/any refined oil
7-8 cloves garlic (minced)
1/4 cup boiled corn
1/4 cup Bell peppers(red, yellow, green)
1/4 cup Broccoli
1/4 cup Button mushroom
2 tbsp carrot (finely chopped)

For pasta

1 cup wheat Macroni pasta/ (any pasta of your choice)
1 tsp Vinegar
2 tsp salt
1 ltr water

Method:

  • In a pan heat some olive oil, add minced garlic and sauté.
  • Now add finely chopped carrot, sauté for about 20 secs then add all bell peppers, broccoli,  mushrooms and boiled corn.
  • Stir and cook until veggies are little cooked but still crunchy. Turn off the flame and transfer them to a plate
  • In low flame, heat butter in the same pan and add all purpose flour (maida), stir continuously and cook for a minute.
  • Grate about a pinch of nutmeg and saute.
  • Pour milk little by little while stirring continuously with the help of whisk, ensure no lumps should be formed to make a perfect sauce
  • Stir and mix for about 2 mins and then add grated cheese and salt . Continue stirring and mixing until mixture starts to thicken
  • While Sauce is getting ready let’s start cooking the pasta. Take 1ltr of water in a wide pan
  • Add salt and vinegar and bring it to boil
  • When water start boiling add wheat pasta and cook them until al-dente (cooked but not very soft). For me it took 6mins. To check whether pasta is cooked or not, take one pasta and bite it, if it is little firm to bite it is cooked. If it is too hard to bite, it requires more cooking or you can also cut the pasta into two half’s and check
  • On the other side Sauce is also ready, it took around 10 mins for the sauce to cook
  • If you find the consistency too thick add some starch water of the boiled pasta.
  • At this stage add veggies, chilli flakes, mixed herbs and crushed/ powdered pepper. Mix well
  • Finally strain and transfer cooked pasta straight from the vessel to sauce pan
  • Mix well and turn off the flame.
  • Transfer it to serving plate and serve hot

Notes/Tips:

  • We have added vinegar while boiling pasta reason being the acid in the vinegar and the residual heat from the cooking pasta make the noodles more absorbent so they'll really soak up the flavor from your dressing or sauce
  • Do not add oil to your pasta cooking water. Oil is said to prevent the pot from boiling over and it may create a barrier while mixing the pasta with the sauce. The general consensus is that it does more harm than good. The best way to avoid sticking pasta from each other is to drain the cooked pasta directly from the pot to the sauce pan.
  • Many people rinse their pasta after cooking it. The only thing this does is remove the starch that helps hold and absorb the sauce. Also the flavor of the pasta is washed away. When the pasta is al dente, drain it and directly transfer it to the sauce pan.
