Chicken lollipops and Chicken Tikka using Schezwan Chutney

 
Chicken Party starter


Indo-Chinese style lollipop and tikka can be made easily at home. This is perfect party appetizers for your kitty parties or any occasions. The sweet and sour chutney makes this dish more scrumptious in taste. Kids and adults will definitely love this crunchy lollipops and lip-smacking grilled chicken tikka. This recipe is quite simple and can be made with the basic ingredients available at home.

Preparation time: 15 mins
Cook time: 30 mins
Serves: 3-4 Pax

Ingredients 



Chicken lollipop 

400 gms Chicken wings

2 tbsp Schezwan Chutney 

1/2 lemon juice 

1/2 tsp Ginger Garlic paste 

1 tsp Chilli sauce

1 tsp Soya sauce

1 tsp Pepper powder

1 egg

2 tbsp Corn flour

1 tsp Cooking oil

Salt as per taste

Oil for frying 



Chicken Tikka

300 gms boneless Chicken (cut into 2 inch cubes)

1/2 lemon juice

2 tbsp Schezwan Chutney 

2 tbsp curd 

1/2 tsp Ginger Garlic paste

1 tsp red chilli powder

1 tsp pepper powder 

2 tsp garam masala powder 

1 tsp oil

2 tbsp Chopped Coriander leaves 

1 cup Onion petals/ Bell Peppers cubes (can use tomatoes as well)

1 tbsp Butter 

Salt as per taste 



Method



Chicken lollipop 


  • Wash and clean the chicken wings thoroughly.
  • Prepare a marinade with Schezwan chutney, lemon juice, soy sauce, chilly sauce, pepper powder, egg, salt, oil and corn flour.
  • Mix it well and make a smooth batter
  • Add the chicken lollipop to the marinade, coat it completely.
  • Let it rest for at-least 30 mins or preferably for 2 hours.
  • Heat oil in a fry-pan.
  • Roll the lollipop in the batter and drop carefully in the hot oil.
  • Turn the flame to medium hot.
  • Deep fry the chicken lollipops until they turn crispy and golden brown.
  • Take care the chicken to be cooked completely inside also and adjust the flame accordingly.
  • Drain the chicken lollipop in kitchen towel.
  • Lip-smacking tasty chicken lollipop is ready.



Chicken Tikka

  • Wash and clean boneless chicken thoroughly 
  • Place chicken pieces in a bowl. Prepare a marinade with schezwan chutney, lemon juice, curd, ginger garlic paste, red chilli powder, pepper powder, Garam Masala powder, oil, Coriander leaves. Mix well and coat all the chicken pieces well with the marinade.
  • Add onion, green, red and yellow capsicums and mix. 
  • Set aside for at-least 30 minutes or preferably for 2 hours
  • Skew the chicken and vegetable pieces on satay sticks (for better understanding please check video)
  • Pour 1 tsp oil on the grill pan. Once oil is heated place the sticks on the grill pan. 
  • Brush little butter over the tikkas 
  • Rotate the sticks so that the tikkas are evenly done on all sides.
  • Arrange the tikkas on a serving plate and serve hot with the Schezwan-mayonnaise dip

Paneer Cheese Mini BombsPaneer Cheese Mini Bombs

 Ever wondered how to make that perfect vegetarian starter which is not only good on the taste buds but easy on the time as well? Next time when you have a house party, delight your guests with these 'mini Bombs'. This appetizer is easy to make and keeps you less time in the kitchen, leaving you with more time to spend with your guests.

Preparation time: 20 mins
Cook time: 15 mins
Serves : 4 - 5 pax

Ingredients

For dough
1 cup All purpose flour/Maida
Water
Salt

For stuffing 
1/2 cup capsicum 
1/2 cup Spring onion
2 finely chopped green chilli 
1 cup grated Paneer / cottage cheese 
3/4th cup grated cheese
Handful of Coriander leaves
1/2 tsp Chilli flakes 
1/2 tsp Mixed herbs
Oil for deep-frying
Salt to taste 

Method 

  • Prepare soft dough mixing Maida, water and little salt. Cover the dough and keep it aside to rest for about 15 minutes.
  • Meanwhile heat 1/2 tsp oil in a pan, add finely chopped capsicum ,spring onion and green chilli.
  • Sauté only for about 10 seconds and switch off the flame
  • Transfer this sautéed veggies in a bowl 
  • Add grated paneer, cheese, coriander leaves, chilli flakes, mixed herbs and salt to taste.
  • Combine the mixture well
  • Make small balls of these mixture and keep it aside
  • Now divide 3 portion of the Maida dough, roll them into big disc. Keep the remaining dough covered with moist cloth to avoid drying till the time you make the last dumpling.
  • Cut the bigger disc with a katori or glass into smaller circles. Roll the smaller disc even further until it becomes transparent.
  • Place the stuffing in the centre & join the opposite sides to give it potli shape. (refer pics below or check the video).
  • I have also given it a  rectangular shape (refer pic below). You can shape the dough as per your choice or can also use mould to make it more attractive 
  • Once all the dumplings are ready, heat oil in pan for deep frying.
  • Fry them in medium flame until they turn golden brown
  • Your Paneer cheese mini bombs are ready to blast in your mouth.

Note/Tips
    • If you don’t have mixed herbs you can also use oregano 
    • You are free to use the vegetables of your choice 
    • You can make a paste of all purpose flour/Maida to stick the edges
    • Make sure to press the edges of your Dumplings to prevent oil from entering them while frying
