Mango, Strawberry & Choco Banana Sorbet
Sorbet

During summer most of us prefer having ice cream to beat the heat, but store bought ice creams are full of fat, refined sugars and other nasty ingredients. Sorbet is a healthy version and quite inexpensive option which you can easily make at home. Sorbet is usually made with fruit and is almost always dairy- and fat-free. Here I have used only 2 ingredients; fresh seasonal fruits and for sweetener honey. So you can enjoy this delicacy guilt free. And yes, if you are vegan you can use maple syrup instead of honey.

Also it is very easy to make. The hardest part will be to wait for it to chill in the freezer, and believe me, you will want to eat it soon! Mango and strawberry sorbet is creamy, smooth, sweet and just slightly tangy whereas banana sorbet is creamy, smooth and very sweet, it’s just like eating creamy frozen fruit dessert.

Preparation time: 15 mins
Freeze time: 7-8 hours
Serves: 2-3

Ingredients

Strawberry sorbet
2 cup fresh strawberry (frozen overnight)
1 tbsp Honey

Choco Banana sorbet
2 cup Banana (frozen overnight)
1 tsp Cocoa powder
1 tbsp Honey
Garnish with nuts/chocolate sauce(optional)

Mango sorbet
2 cup fresh sweet Mango (frozen overnight)
1 tbsp Honey
Garnish with Lemon zest(optional)

 Method:

  • Cut and freeze strawberry, banana and mango overnight or at-least for 5-6 hours. Just ensure to cover the fruits with cling wrap so that ice or water crystals are not formed.
  • Freeze until hardened , add the frozen fruits and honey to a blender or food processor and combine until it is smooth and creamy. Please note for choco banana sorbet you will also have to add cocoa powder.
  • Pour it in a air tight container cover with cling wrap and freeze it overnight or until completely frozen.
  • Your creamy smooth sorbet is ready to be relished.
  • Garnish with your favourite nuts or can have as it is. Enjoy!

Notes/ Tips:

  • Please ensure the fruits to be frozen hard to get the perfect smooth texture or it may turn runny.
  • You can increase or decrease the quantity of honey depending upon the sweetness of the fruit
  • Make sure the sorbet is covered with a airtight lid or cling wrap before freezing else it might form water crystals on the top
  • Vegans can use fresh maple syrup instead of honey
  • Any seasonal fruits can be used like blueberries, blackberries and raspberries, avoid using very watery fruits like watermelon
