This homemade Chicken soup recipe is OIL FREE and we are a huge fans of soup in our house. A healthy soup is an absolute comfort food. This easy chicken soup recipe is a simple and quick recipe with some added vegetables to enhance it's nutritious value. It's delicious and healthy, so even your kids will enjoy this very much.There are plenty of canned options out there when you need a quick chicken soup fix, but I prefer making it from scratch. So let’s see how to make it!

Cook time: 15 mins
Serves: 4 Pax 

Ingredients :

300 gms Boneless chicken
5-6 cloves garlic
1 inch ginger
1 tsp Peppercorns
1 small Cinnamon stick
1 carrot and Beans (or veggies of your choice)
2 egg white
2 tsp Cornflour
Coriander leaves
Serve with Lemon juice/crushed pepper

Method: 

  • Heat around 750ml water in a wide pot
  • Add slit ginger, garlic, peppercorns and cinnamon stick. Boil for about 2 mins.
  • Now add boneless chicken, vegetables of your choice and salt as per taste.
  • Cover the lid and cook them for atleast 10 minutes or until chicken is cooked.
  • Strain the broth and separate the chicken and veggies. Keep them to cool down for sometime 
  • Cut the veggies and shred the chicken
  • Now in the same pot pour the broth add shredded chicken and cut vegetables. Keep the flame medium 
  • Add Coriander leaves/ celery and crush some pepper over it 
  • Make a paste of 2 tsp corn flour powder. Use the same broth water to make paste.
  • Add it in the soup to make it little thick in consistency
  • Now finally add 2 egg whites. Keep stirring while pouring the egg whites in the soup
  • Healthy chicken soup with zero percent oil is ready to be served hot 
  • Can serve with a dash of lemon juice and crushed pepper

Note:
Cutting veggies after boiling them will ensure it won’t turn soggy and will retain the shape.
Cornflour is used to thicken the soup however if you don’t want to use can skip it.
I have used boneless chicken, you can also used with bone. Just ensure to separate the bone while shredding the meat.
Vegetables can be used of your choice and liking. You can also use white onions in the soup.
Egg white will enhance the taste of the soup and also the soup will look presentable
