Boiled eggs with aromatic Green masala is a flavourful Indian dish mainly made of coriander and mint leaves. It goes really well with chapati, rice, paratha, bhakri or dosa. Hara masala egg curry is a quick and delicious recipe for egg lovers. The texture of the Hariyali anda masala is so creamy that it gives the look of restaurant or dhaba type gravy. If you like variations in your egg dishes then this is an ideal dish to experiment on. Here is step by step procedures how to make Egg green masala along with recipe video.

Ingredients


4 eggs
2 medium sized onion ( Paste )
2 Bay leaves
A pinch of Turmeric Powder
1 tsp Garam Masala Powder
2 tbsp Oil
Salt as per taste

For green masala:


A bunch of coriander leaves
Handful of mint leaves
6-7 Garlic
1 inch Ginger
4 green chilli
7-8 cashew nuts (optional)

Method to cook boiled egg masala


  • Hard Boil eggs for just 2 mins. Please check link for detail description:
  • Grind all the masalas mentioned under green masala
  • Grind onion to form a paste
  • In a pan add 2 tbsp oil, once oil is heated add bay leaves
  • Next add onion paste and sauté for 2-3 mins
  • Later add grounded green masala, salt, turmeric powder and Garam Masala powder. Sauté for 5 minutes
  • Add water as per the consistency you require
  • Cover and cook the masala well for 10 minutes
  • Once oil starts oozing out place the eggs carefully. Apply some masala over the eggs so that it enters inside the egg
  • Cover and cook for 2 mins
  • Serve Anda Hara Masala hot with paratha, bhakri, roti, rice or dosa
