Akuri - Parsi scrambled eggs recipe
Akuri or Akoori
The greatest gift to Mumbai is most prabably Parsi Cuisine which adds flavour to this cosmopolitan city. The fast life of this city is well fed every morning (or afternoon or night) by this easy to make yet delicious egg dish, Akuri / Akoori. If you can't visit a Parsi restaurant to enjoy this dish, don't worry. Here is an easy recipe for you to enjoy this mouth watering Parsi scrambled egg dish right in your home. Preparation time: 10 mins
Cook time: 12 mins
Serves: 3 Pax
Ingredients
4 eggs
1 tbsp Fresh Cream/ Milk
Butter
1 chopped Green Chilli
1 medium sized chopped Onion
1/2 tsp Ginger Garlic paste
2 small sized chopped tomatoes
Handful of Coriander leaves
1 tsp Kashmiri red chilli powder
1/2 tsp turmeric powder
1/2 tsp pepper powder
Salt as per taste
Method:
- Whisk 4 eggs along with cream until it turns frothy
- In a pan take a dollop of butter, add green chilli, finely chopped onion and ginger-garlic paste. Keep the flame medium
- Sauté them well until onion turns translucent
- Now add finely chopped tomatoes, coriander leaves, red chilli powder, turmeric powder, pepper powder and salt as per taste
- Sauté for about 2 mins till all the masala is cooked and oil starts oozing out
- In this stage add 1 tsp of butter and sauté for a minute
- Finally add whisked eggs keep the flame low and scramble until half done or well done
- Akuri is ready to be served, serve them hot with toast or Pav
Note :
- You can skip using fresh cream and substitute it with 1 tbsp milk to get that perfect froth.
- Serve the egg consistency you desire. I like it runny and soft some like it well cooked and hard
